Spinach Salad with Japanese Ginger Dressing








Here is another spinach salad we tried out tonight... I really enjoyed this one too... Not as sweet as the apple spinach one we tried before.... But tones of flavor and another thing i liked about this salad was it was not as oily of a dressing...Instead of the minced onion I rehydrated the 3 onion dip mix ( 1 tbsp ) in the vinegar again like last time....

Here is the recipe I made:

3 tablespoons minced onion
3 tablespoons peanut, or canola oil
2 tablespoons white vinegar
1 1/2 tablespoons finely grated fresh ginger
1 tablespoon ketchup
1 tablespoon reduced-sodium soy sauce ( I use a product called BRAGG )
1/4 teaspoon minced garlic
10 ounces fresh spinach
1 large carrot, grated
1 medium red bell pepper, very thinly sliced
freshly ground pepper, to taste
Instructions:
Combine onion, oil, vinegar, ginger, ketchup, soy sauce, garlic, salt and pepper in a blender. Process until combined.
Toss spinach, carrot and bell pepper with the dressing in a large bowl until evenly coated - I prefer to dress each salad individually so we don't end up with a bunch of left overs that we probably won't eat!

Spinach and Apple Salad


I'm not a big salad eater.... I guess I should say I'm not at big lettuce eater! I like salads with substance... I found the recipe for this spinach & apple salad online tonight and decided to try it out for supper.... Both my husband and I give it 2 thumbs up!!! The dressing is perfect... Not too sweet.. Not too vinegary... Just perfect... In the following recipe I put how I made it... A few adjustments from the recipe I found online ( to see the original recipe here is the link: The Curvy Carrot - Spinach and Apple Salad... I assembled and dressed each salad on our own plates so we wouldn't have a bunch of dressed left over salad we probably wouldn't eat.... This recipe makes enough dressing for about 4 salads. Enjoy!!!

Spinach and Apple Salad

Servings: 4

Ingredients:

For the salad dressing:

1/4 cup minced sweet onion OR if you don't have sweet onion in the house, take 1 Tbsp on dried onion ( I actually used 3 onion dip mix from epicure ) and put it in with the 3 tbsp vinegar that you will use in the recipe... Let sit and soften before adding the oil ect ... I guess the vinegar will soften the dehydrated onion... So you won't get crunchy bits..

3 tablespoons apple cider vinegar

3 tablespoons white vinegar

2 tablespoons sesame seeds

Pinch paprika

2 tablespoons sugar

1/2 cup extra virgin olive oil

For the salad:

Slivered Almonds, about 1/2 cup... More or less depending on how much you like them....

Dried cranberries ( I use Craisens ) again, however many you like... I just sprinkle them on top :)

One 10-ounce bag of pre-washed, ready-to-use spinach leaves

2 medium apples (variety of your choice), cored, quartered, and thinly sliced

Cheese (variety of your choice), optional
My husband used feta on his and said was delicious... I did not have any on mine.

Instructions

1. For the salad dressing: In a medium-sized bowl, combine the onion, vinegars, sesame seeds, and paprika. Mix well.

2. Add the 2 tablespoons of the sugar to the mixture and mix until combined.

3. Whisking constantly, slowly drizzle the olive oil into the mixture. I put the dressing into a small container with lid so i can shake it up well before spooning over the salad... Set aside.

4. Toast the almonds in a frying pan... I just put the almonds in the pan and heat it up till the almonds start to toast... Careful you don't burn them. I don't add any oil/butter to the nuts as they have natural oils in them already...

5. Assemble the salad as desired, and drizzle with salad dressing.
